It may have been an accident that prompted Miki Hambalek to become a butcher.

But for the hundreds of Londoners hungry for high quality gluten-free sausage, it was a blessing in disguise.

Hambalek is the owner of The Hungary Butcher, a specialty deli with three locations in London including Hyde Park’s Ogilvies Market. And he’s famous around town for his sausage.

A car accident forced Hambalek to give up his successful construction business and he launched a second career as a butcher. He learned the tricks of the trade from a Hungarian farmer and honed his talent with experience.

Originally he teamed up with his wife, Agnes, who owned A Taste of Hungary in south London. They later switched ownership of the business to him, and renamed the business The Hungary Butcher.

Sausage is Hambalek’s specialty.

“Everything about it is all natural,” he says.

The Hungary Butcher sells 41 different kinds of sausage, 40 of which are gluten free. Each sausage is handmade with high quality ingredients. There are no fillers in the sausage. He uses all-natural casings and no nitrates.

Sausage is made fresh throughout the week, and any product that is frozen is usually sold within two weeks.

When Hambalek opened The Hungary Butcher he started out making a small selection of Hungarian and regular breakfast sausages.

But when customers from different countries began bringing in their own traditional recipes and requesting Hambalek try them out, he began to broaden his horizons, adding his own twist to his international roster of recipes.

Now the Hungary Butcher display cases feature a United Nations of sausage selling everything from maple, hawaiian bacon and oktoberfest, to chorizo, maltese and sicilian fennel. A selection is available each week and customers can order ahead for specific varieties.
